Here is a recipe that I made the other day. I had been making different treats for friends who have different food allergies. The one I am describing today is Blueberry Frozen yogurt. If I gave you a bowl of this you would have no idea how simple and how healthy it actually is, because it is delicious. I used blueberries that we had picked and frozen fresh, so there was no sugar added. I also made this multiple times with different types of yogurt. Once with ginger lemon yogurt and another time with, plain Greek yogurt. It was delicious both times. But if you like ginger you might consider adding a little, it gave it such a pop of flavor really bringing out the blueberries. It is so easy and quick, I was delighted. Served it right from the container, no freezing or anything. It would definitely be something you could do as a dessert for those unexpected guests, and look like you have all your ducks in a row at any point in time. Which if you are me does not always happen.
- 2 cups of frozen blueberries
- a heaping tablespoon or two of the yogurt of your choice
- fresh squeezed lemon juice
Put everything in a food processor and blend till smooth and creamy.
If you are like me, you wouldn’t bother with this recipe unless you were on some crazy diet and in search of dessert, or on a health kick. I am serious it was delicious and I plan to make it again and again and again. I have yet to try it with other frozen berries but I bet it would work just as well.
